Today I decided to make some nice munchies because I did not want to do some long cooking. Chick peas are high in protein and make a perfect subtitute for meat in vegetarian and vegan diets.
I will just do a simple hummus with some rye crackers. I put the brand that I used for the crackers( next time we can do them from scratch)
Simple and quick.
For that you will need:
250 grams of chickpeas.
80 cl of plant based milk, I choose some almond milk.
One small red onion
1/4 of cucumber
Some cherry tomatoes
Some chia seeds to sprinkle on your toast.
2 cloves of garlic
2 tablespoons of olive oil
Half a sweet bell pepper, use any colors :--)
First step :
Add the chickpeas, garlic and the oil in a blender. Blend it until smooth and creamy( if you want to give a richer and deeper creamy taste you can add some plain cashew( 40g).
When it is done and have a good texture set it aside in a bowl.
Second steps :
I like to cut my cucumber in "Julienne style" (into long thin strips, similar to matchsticks).
The cherry tomaoes can be cut in two.
Cut the red onion thin slices.
The sweet peppers could be cut in cubes to sprinkle on your bread too.
Set aside
Third steps :
With a knife spread your creamy hummus on a rye craker add the cucumber, cherry tomatoes and the sweet bell peppers
Sprinkle some chia seeds and repeat the process.
This recipe should take you less than 20 minutes.
When you invite friends around it is a good appetizers to serve!
